Fried, baked 
or mashed.

I like the potato,
so humble,
earthy and scented of dirt.

Eaten by most,
Food for the poor,
Just ask the old Irish.

Discovered in the Andes, 
My South American heritage.

I love you potato,
I’ve come of age,
Because now i respect you.
